  • 4 cups broccoli florets, chopped small
  • 1 to 2 pieces apples, chopped Use crisp varieties like Honeycrisp or Fuji
  • 1/3 cup red onion, finely chopped Optional but tasty
  • 1/3 cup dried cranberries or raisins
  • 1/3 cup sunflower seeds or chopped walnuts
  • 1 handful shredded cheddar or feta Optional
Dressing Ingredients
  • 1/3 cup mayo or plain Greek yogurt Or half and half for a lighter dressing
  • 2 tablespoons apple cider vinegar
  • 1 to 2 tablespoons honey or maple syrup
  • 1 pinch salt
  • 1 pinch black pepper

Instructions
 

Preparation
  1. Chop the broccoli into small pieces. Peel thicker stems if using and chop them too.
  2. Chop the apples. If making ahead, toss them with a little lemon juice to prevent browning.
Dressing
  1. In a small bowl, stir together mayo or yogurt, vinegar, honey, salt, and pepper. Taste and adjust flavors as desired.
Combine
  1. In a large bowl, mix together broccoli, apples, onion, dried fruit, and seeds.
  2. Pour the dressing over the salad and toss until everything is well coated.
  3. Chill the salad for at least 30 minutes before serving, if possible. Taste again and add more salt if needed.
