Preparation
  1. Soften the cream cheese by leaving it on the counter for about 30 to 45 minutes.
  2. Beat the cream cheese until smooth, then add powdered sugar, vanilla, and a tiny pinch of salt if desired, mixing until creamy and fluffy.
  3. Gently fold in the whipped topping until just combined, to keep it light and fluffy.
  4. Spread the creamy filling into the graham cracker crust and smooth the top with a spatula.
  5. Spoon the cherry pie filling on top, starting at the edges and working inward for an even spread.
  6. Chill in the refrigerator for at least 4 hours, preferably overnight, for the best texture and cleaner slices.
