  • 1 to 1.25 pounds chicken breast or chicken thighs, sliced thin
  • 1 large onion, sliced
  • 1 large green bell pepper, sliced Red or yellow works too
  • 6 to 8 ounces mushrooms, sliced Optional, but recommended
  • 2 tablespoons oil or butter, divided
  • 2 cloves garlic, minced
  • 1 teaspoon salt, plus more to taste
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder Optional, but helpful
  • 1 to 2 teaspoons Worcestershire sauce Optional, adds savory depth
  • 4 pieces hoagie rolls
  • 6 to 8 slices provolone cheese, or 1.5 cups shredded mozzarella

Instructions
 

Preparation
  1. Slice everything first to ensure quick cooking.
  2. Heat 1 tablespoon oil or butter in a large skillet over medium high heat. Add onions and peppers, plus mushrooms if using. Cook for 6 to 9 minutes until soft and lightly browned, then scoop onto a plate.
  3. Add the remaining oil or butter to the skillet. Add sliced chicken, sprinkle with salt, pepper, paprika, and garlic powder. Cook for 5 to 7 minutes until no longer pink.
  4. Stir in minced garlic for about 30 seconds. Add cooked veggies back to the skillet and splash in Worcestershire sauce. Stir together and adjust seasoning to taste.
  5. Turn heat to low. Lay provolone slices over the top of the chicken and veggies. Cover the skillet for 1 to 2 minutes until melted, then stir gently to coat.
  6. Toast your rolls if desired, then fill them with the chicken and veggie mixture and serve hot.

Notes

Slice chicken thin for quicker cooking. Do not overcrowd the skillet when cooking chicken. Toast rolls for a better texture.
