Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with foil or use a baking dish.
- Crush the crackers and place them in a large bowl. Add the milk and let it sit for a minute to soften.
- Add chopped onion, optional bell pepper, eggs, ketchup, salt, black pepper, and garlic powder to the bowl. Stir to combine.
- Add the ground beef and mix gently with your hands until just combined. Shape into a loaf and place on the lined baking sheet.
- Bake for 50 to 60 minutes, until the internal temperature reaches 160°F (70°C).
- In a separate bowl, mix together ketchup, brown sugar, and mustard to create the glaze.
- Spread the glaze on the meatloaf during the last 15 to 20 minutes of baking for a glossy finish.
- Let the meatloaf rest for 10 to 15 minutes before slicing.
