Ingredients

For the filling
  • 8 oz cream cheese, softened (full fat tastes best)
  • 1 cup powdered sugar works better than granulated for smooth filling
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice (optional but recommended for brightness)
  • 1 tub whipped topping (8 oz) or 2 cups homemade whipped cream
  • 1 pinch salt keeps sweetness from tasting flat
For the crust
  • 1 pie crust graham cracker crust (store-bought or homemade)

Instructions

Preparation
  1. In a medium bowl, beat the softened cream cheese until smooth.
  2. Add the powdered sugar, vanilla, lemon juice (if using), and salt, mixing until creamy and even.
  3. Gently fold in the whipped topping using a spatula.
  4. Spoon the filling into the crust and smooth the top. Chill for at least 4 hours, preferably overnight.
Serving
  1. Before serving, freeze the pie for 15 minutes for cleaner slices.
  2. Use a sharp knife and wipe between cuts for neat slices.

Notes

For variations, consider mixing cocoa powder for a chocolate version, or top with fresh fruit. Keep chilled until ready to serve, especially for gatherings.
