  • 2 cups broccoli florets Fresh or frozen both work.
  • 1 cup raw cashews Unsalted is best for creaminess.
  • 1 cup unsweetened plant milk Oat or soy milk recommended.
  • 1/4 cup nutritional yeast For cheesy flavor.
  • 2 tablespoons lemon juice To add brightness to the sauce.
  • 1 teaspoon garlic powder Flavor builder.
  • 1 teaspoon onion powder Flavor builder.
  • 1/2 teaspoon salt Don't under-salt the pasta water.
  • 1/4 teaspoon black pepper To taste.
  • 1 teaspoon mustard Adds depth to the 'cheese' flavor.

Instructions
 

Cooking Pasta and Broccoli
  1. Cook the macaroni pasta in well-salted water according to package directions.
  2. When the pasta has about 2-3 minutes left, add the broccoli to the pot to steam it.
Preparing the Sauce
  1. Soak the cashews in hot water for 10-15 minutes.
  2. Blend soaked cashews with plant milk, nutritional yeast, lemon juice, garlic powder, onion powder, salt, black pepper, and mustard until smooth.
  3. If the sauce is too thick, add a little more plant milk.
Combining and Finishing
  1. Pour the blended sauce into a warm pot or skillet over low heat and cook for a couple of minutes until slightly thickened and fragrant.
  2. Add the drained pasta and broccoli to the pot and stir until everything is well coated with the sauce.
  3. Taste and adjust salt and seasonings as needed.
  4. Optional: top with breadcrumbs and bake for 10 minutes for a crispy topping.

Notes

For best results, salt the pasta water well and blend the sauce longer for a creamy texture. If reheating leftovers, add a splash of plant milk to loosen the sauce.
