  • 2 pounds Chicken (breasts or thighs)
  • 1 teaspoon Salt Plus more to taste
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1-2 teaspoons Italian seasoning Or a mix of basil and oregano
  • 2 cups Chicken broth
  • 1 can Cream of chicken soup Or cream of mushroom
  • 8 ounces Cream cheese Cut into chunks
  • 2 cups Shredded cheddar Or cheddar blend
  • 1 small Onion Finely chopped (optional)
  • 1 bell pepper Chopped Optional, adds sweetness
  • 12 ounces Spaghetti
  • 1 pinch Red pepper flakes Optional for heat
  • 1-2 spoonfuls Rotel Optional for heat

Instructions
 

Preparation
  1. Add the chicken to your slow cooker. Sprinkle on salt, garlic powder, onion powder, and Italian seasoning.
  2. Pour in the chicken broth, then spoon in the cream of chicken soup. Add chopped onion and bell pepper if using.
  3. Cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the chicken is very easy to shred.
  4. Shred the chicken right in the slow cooker using two forks.
  5. Add cream cheese chunks. Cover for 15 to 20 minutes to soften, then stir until creamy.
  6. Stir in shredded cheddar until melted. Taste and adjust seasoning. Add more broth if desired.
  7. Cook spaghetti separately until just barely done, then drain.
  8. Stir pasta into the slow cooker and let sit for about 5 minutes with the lid on.

Notes

For best results, do not overcook the chicken. Add dairy at the end for a creamier texture. Keep pasta separate during cooking to maintain texture.
