Preparation
- Add the chicken to your slow cooker. Sprinkle on salt, garlic powder, onion powder, and Italian seasoning.
- Pour in the chicken broth, then spoon in the cream of chicken soup. Add chopped onion and bell pepper if using.
- Cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the chicken is very easy to shred.
- Shred the chicken right in the slow cooker using two forks.
- Add cream cheese chunks. Cover for 15 to 20 minutes to soften, then stir until creamy.
- Stir in shredded cheddar until melted. Taste and adjust seasoning. Add more broth if desired.
- Cook spaghetti separately until just barely done, then drain.
- Stir pasta into the slow cooker and let sit for about 5 minutes with the lid on.

Notes
For best results, do not overcook the chicken. Add dairy at the end for a creamier texture. Keep pasta separate during cooking to maintain texture.
