  • 1 lb Ground beef (85 or 90 percent lean) If fattier, spoon off extra grease.
  • 4 tbsp Butter Salted or unsalted both work.
  • 4 cloves Garlic, minced Fresh tastes best, but garlic paste works in a pinch.
  • 8 oz Pasta (e.g., penne, rotini, or shells) Short shapes are easiest in one pot.
  • 4 cups Beef broth Chicken or veggie broth can substitute.
  • 1 cup Milk or cream Optional, adds richness.
  • 0.5 cup Parmesan cheese, grated Fresh grated melts better.
  • to taste Salt Add slowly, taste at the end.
  • to taste Black pepper Add slowly, taste at the end.
  • 1 tbsp Italian seasoning Optional, enhances aroma.
  • 1 medium Onion, chopped Optional, adds sweetness.

Instructions
 

Preparation
  1. In a large pot or deep skillet, heat over medium heat and add the ground beef, breaking it up as it browns.
  2. If using onion, add it now to soften with the beef.
  3. Once the beef is cooked through, drain off any excess grease.
  4. Add butter and let it melt into the beef.
  5. Stir in the minced garlic and cook for about 30 seconds to 1 minute until fragrant.
  6. Add the dry pasta and pour in the beef broth, stirring well to combine.
  7. Bring the mixture to a gentle boil, then reduce heat to a simmer and cover the pot.
  8. Cook for about 10-13 minutes, stirring every couple of minutes and adding more broth or water if it looks dry.
  9. When the pasta is tender, add a splash of milk or cream if desired, then stir in Parmesan until melted.
  10. Season with salt, pepper, and Italian seasoning to taste.

Notes

This dish tastes even better after it sits for a couple of minutes. Adjust seasoning as needed based on the saltiness of the broth and cheese.
