  • 4 cloves garlic, minced Freshly minced for best flavor.

  • 1-1.5 cups freshly grated Parmesan Grate fresh for a smoother sauce.

Preparation
  1. Boil the pasta. Salt the water until it tastes like the sea. Cook the pasta until just tender, saving about 1 cup of pasta water before draining.
  2. Brown the sausage bites in a large skillet over medium-high heat until golden and edges are brown.
Making the Sauce
  1. Add 2 tablespoons of butter to the skillet with sausage. Once melted, add minced garlic and stir for about 30 seconds.
  2. Pour in the cream, warm it up, then gradually add the Parmesan, stirring gently. Adjust thickness with pasta water as needed.
Finishing Touches
  1. Combine the drained pasta with the sauce and toss. Add more butter if desired for glossiness. Season with salt, pepper, and crushed red pepper to taste.
