  • 1 sleeve saltine crackers, lightly crushed into bite size pieces
  • 3 to 4 pieces ripe tomatoes, chopped Summer garden tomatoes are best, but grape tomatoes work too.
  • 1/2 cup mayonnaise Use more if you like it extra creamy.
  • 1 to 2 teaspoons apple cider vinegar or pickle juice Use for tang.
  • 1/2 teaspoon black pepper
  • Salt, only if needed Crackers and mayo already bring salt.
Optional Add-Ins
  • sliced green onions
  • a little sugar pinch For balancing acidity.
  • chopped cucumber Adds extra crunch.
  • crumbled bacon Adds flavor.

Instructions
 

Preparation
  1. Chop the tomatoes and let them sit in a colander or on paper towels for a couple of minutes.
  2. Crush the saltines into small flakes and chunks to maintain texture.
  3. In a large bowl, stir together mayo, vinegar (or pickle juice), and black pepper.
  4. Fold in the chopped tomatoes.
  5. Right before serving, fold in the crushed saltines.

Notes

Best served fresh. If made in advance, keep the tomatoes and dressing separate until just before serving to maintain cracker crunch.
