  • 3 cups cooked chicken, chopped or shredded Rotisserie chicken works well
  • 1 head romaine lettuce
  • 1 small red onion, thinly sliced and chopped
  • 1 cup pepperoncini Chopped
  • 1 cup shredded mozzarella Optional
For the dressing
  • 1/3 cup mayo or half mayo and half Greek yogurt
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, grated or a pinch of garlic powder
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 1-2 teaspoons pepperoncini juice For added tanginess

Preparation
  1. Chop the chicken into small bites.
  2. In a big bowl, stir together the dressing ingredients and taste to adjust salt, pepper, and vinegar.
  3. Add chicken, onion, pepperoncini, and cheese. Stir until coated.

  5. Chill for 10 to 15 minutes if time allows.
