Marinade
  • 1/3 cup vinegar Apple cider or white vinegar is preferred.
  • 2 tablespoons olive oil or a neutral oil
  • 1-2 tablespoons sugar Adjust based on desired sweetness.
  • 3/4 teaspoon salt Start with this amount, adjust to taste.
  • black pepper, to taste A few grinds.
Optional Extras
  • chopped dill or parsley Optional, depending on taste.

Preparation
  1. Slice the cucumbers and onions, and chop the tomatoes. Put everything in a big bowl.
  2. In a small jar or cup, stir vinegar, oil, sugar, salt, and pepper until the sugar mostly dissolves.
  3. Pour the marinade over the vegetables and toss well.
  4. Let it sit for 15 to 30 minutes before eating. If you have time, chill it for an hour for even better flavor.
  5. Taste and adjust the seasoning with more salt, sugar, or vinegar as needed.

Notes

To keep cucumbers crisp, avoid thick skin by peeling stripes. For softer onions, thinly slice and soak in the marinade. Best eaten within 1-2 days.
