  • 400 g spaghetti
Sauce Ingredients
  • 100 g pancetta or guanciale, diced
  • 2 large eggs Use large eggs for best results.
  • 50 g Parmesan cheese, grated Grate fresh for the best flavor.
  • 50 g Pecorino cheese, grated Optional, but adds great flavor.

Preparation
  1. Cook spaghetti according to package instructions in salted water until al dente.
  2. While the pasta cooks, fry pancetta or guanciale in a large skillet over medium heat until crispy.
Combine
  1. In a bowl, whisk together eggs and both types of cheese until smooth.
  2. Once the pasta is cooked, reserve some pasta water and drain the rest.
  3. Add the hot pasta directly into the skillet with pancetta and remove from heat.
  4. Quickly pour the egg and cheese mixture over the pasta, stirring rapidly to avoid scrambling the eggs.
Final Touch
  1. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  2. Season with black pepper and extra cheese if desired.
