  • 1/3 medium onion red onion, sliced thin Soak in cold water for 10 minutes to reduce sharpness.
  • 3-4 tablespoons rice vinegar or apple cider vinegar Rice vinegar adds a softer, slightly sweet flavor.
  • 1-2 tablespoons sugar or honey Adjust based on desired tanginess.
  • 1 teaspoon salt Plus more to taste.
  • black pepper A few good twists.
  • 1-2 teaspoons toasted sesame oil The key ingredient for added flavor.
  • 1 tablespoon soy sauce Optional but recommended for a savory bite.
  • chili flakes or chili crisp Optional, for added heat.
  • sesame seeds For topping, adds a fancy touch.
  • fresh dill or cilantro Optional, for extra freshness.

Preparation
  1. Wash and dry your cucumbers. Slice them thinly; you can choose rounds, half moons, or ribbons.
  2. If you prefer extra crunch, sprinkle the cucumber slices with a pinch of salt and let sit for 10 minutes before blotting with paper towels.
  3. Slice the red onion thinly and drain well if you soaked it.
  4. In a small bowl, mix vinegar, sugar or honey, salt, pepper, sesame oil, and soy sauce if using. Adjust to taste.
  5. In a large bowl, combine cucumbers, onion, and dressing. Toss gently.
  6. Top with sesame seeds and chili flakes if desired.
  7. Chill for at least 15-20 minutes before serving for best flavor.

Notes

For the freshest crunch, consume within 24 hours. Store in an airtight container in the fridge. If made ahead, consider storing the dressing separately.
