Preparation
- Wash and dry your cucumbers. Slice them thinly; you can choose rounds, half moons, or ribbons.
- If you prefer extra crunch, sprinkle the cucumber slices with a pinch of salt and let sit for 10 minutes before blotting with paper towels.
- Slice the red onion thinly and drain well if you soaked it.
- In a small bowl, mix vinegar, sugar or honey, salt, pepper, sesame oil, and soy sauce if using. Adjust to taste.
- In a large bowl, combine cucumbers, onion, and dressing. Toss gently.
- Top with sesame seeds and chili flakes if desired.
- Chill for at least 15-20 minutes before serving for best flavor.
Notes
For the freshest crunch, consume within 24 hours. Store in an airtight container in the fridge. If made ahead, consider storing the dressing separately.
