  • 1/3 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cups all-purpose flour Measure properly to avoid dry dough.

  • 1/4 teaspoon salt Enhances peanut butter flavor.
  • 1/2 cup chocolate chips or chopped peanuts Optional add-ins.

Instructions
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix the softened butter, peanut butter, brown sugar, and white sugar until smooth and creamy.
  3. Add the egg and vanilla, mixing until glossy and combined.
  4. Sprinkle in the flour, baking soda, and salt. Stir just until no dry flour remains. If adding chocolate chips or peanuts, fold them in now.
  5. Scoop the dough onto the baking sheet with spacing in between. Optionally, press lightly with a fork to create a crisscross pattern.
Baking
  1. Bake for 9 to 11 minutes, until the edges are set but the centers look soft.
  2. Let cool on the pan for 5 minutes before transferring to a wire rack to finish cooling.

Notes

To keep cookies chewy, do not overbake. Store in an airtight container, adding a slice of bread to help retain moisture. Can freeze dough for later baking.
