Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, mix the softened butter, peanut butter, brown sugar, and white sugar until smooth and creamy.
- Add the egg and vanilla, mixing until glossy and combined.
- Sprinkle in the flour, baking soda, and salt. Stir just until no dry flour remains. If adding chocolate chips or peanuts, fold them in now.
- Scoop the dough onto the baking sheet with spacing in between. Optionally, press lightly with a fork to create a crisscross pattern.
Baking
- Bake for 9 to 11 minutes, until the edges are set but the centers look soft.
- Let cool on the pan for 5 minutes before transferring to a wire rack to finish cooling.

Notes
To keep cookies chewy, do not overbake. Store in an airtight container, adding a slice of bread to help retain moisture. Can freeze dough for later baking.
