Instructions
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x5 loaf pan or line with parchment paper.
  2. In a large bowl, mash bananas until mostly smooth. Stir in melted butter, brown sugar, eggs, vanilla extract, and sour cream until creamy and glossy.
  3. Sprinkle flour, baking soda and salt over the wet mixture and stir gently until no dry flour remains.
Baking
  1. Pour half of the batter into the prepared loaf pan. Spoon half of the caramel sauce over it. Add the remaining batter and drizzle the rest of the caramel sauce on top. Use a butter knife to gently swirl the caramel into the batter.
  2. Bake for 50 to 65 minutes, checking for doneness at 50 minutes using a toothpick.
Cooling
  1. Cool in the pan for 15 minutes, then transfer to a rack to cool completely.
  2. Drizzle with warm caramel and add a pinch of flaky salt before serving.

Notes

For best results, use very ripe bananas. Allow to cool for 20 to 30 minutes before slicing to avoid crumbling.
