Savory Salisbury Steak with Rich Mushroom Gravy

Ingredients
  

For the Salisbury Steak
  • 1 to 1.5 pounds ground beef, 80 or 85 percent lean This fat content keeps the patties juicy.
  • 1 large egg
  • 1/3 cup breadcrumbs Plain or seasoned.
  • 2 tablespoons grated onion or finely chopped onion
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt Plus more to taste.
  • 1/2 teaspoon black pepper
For the Mushroom Gravy
  • 2 tablespoons oil or butter for the pan For cooking the patties and mushrooms.
  • 8 to 12 ounces mushrooms, sliced
  • 2 tablespoons flour
  • 2 cups beef broth
  • optional a splash of milk or cream For a softer gravy.

Preparation
  1. In a bowl, gently mix the ground beef, egg, breadcrumbs, onion, Worcestershire sauce, salt, and black pepper until just combined. Shape mixture into 4 to 6 oval patties.
  2. Heat oil or butter in a large skillet over medium to medium high heat. Add patties and brown well, about 3 to 4 minutes per side.
Cooking the Gravy
  1. Move browned patties to a plate. In the same pan, add sliced mushrooms. If pan looks dry, add a bit more butter.
  2. Let mushrooms brown for about 5 to 7 minutes, stirring occasionally.
  3. Sprinkle flour over mushrooms, stir for one minute, then slowly pour in beef broth, scraping up browned bits from the bottom.
  4. Bring gravy to a gentle simmer until thickened, about 3 to 6 minutes. Optionally, add a splash of milk or cream for richness.
  5. Return patties to the pan, nestling them in the gravy. Simmer on low for 8 to 12 minutes until patties are cooked through.
Serving
  1. Let the dish rest off the heat for a couple of minutes before serving to allow flavors to meld.

Notes

For gluten-free versions, substitute breadcrumbs with gluten-free breadcrumbs and flour with a gluten-free flour blend. Serve with mashed potatoes, rice, or bread.
