Preparation
- Grab a big skillet and set it over medium heat. Add the ground beef and cook it until it is no longer pink, breaking it up into small crumbles.
- If there is a lot of grease, spoon some off, but leave a little behind for flavor.
- Add onion and bell pepper. Cook for about 4 to 5 minutes until they soften. Stir in garlic and cook for about 30 seconds.
- Add ketchup, tomato paste, Worcestershire sauce, brown sugar, mustard, and vinegar. Stir until meat is coated and sauce looks smooth.
- Turn the heat down and let it simmer for 8 to 12 minutes, stirring occasionally. Adjust consistency by adding water if too thick or simmering longer if too loose.
- Taste and adjust sweetness or tanginess to preference.
- Toast your buns if desired, then pile on the meat and serve.

Notes
For an oily filling, add a spoonful of tomato paste and simmer longer. Leftovers can be stored for 3-4 days in the fridge or frozen for 2-3 months. Best served with napkins!
