Preparation
- Bring a big pot of salted water to a boil and cook the rigatoni until just barely done. Scoop out about a cup of pasta water before draining.
- In a large skillet over medium heat, brown the sausage, breaking it up with a spoon.
- Once browned, add the chopped onion and cook until softened.
- Add minced garlic and stir for about 30 seconds until fragrant.
- Stir in tomato paste and let it cook for a minute until it deepens in color.
- Pour in crushed tomatoes, season with salt, black pepper, and optional red pepper flakes, then let it simmer for 5-8 minutes.
- Lower the heat and stir in heavy cream until the sauce turns creamy.
- Adjust the flavor, adding reserved pasta water if the sauce is too thick.
- Add drained rigatoni to the skillet and toss together for a minute to soak up the sauce.
- Finish with freshly grated parmesan and optionally stir in spinach or basil.
