Instructions

Preparation
  1. Preheat your oven to 350 F.
  2. Place your pie crust into a pie pan and crimp the edges. Set it on a baking sheet for easy moving.
  3. Sprinkle chocolate chips on the bottom of the crust.
  4. Add about half the pecans next, reserving whole pecans for the top if desired.
  5. In a bowl, whisk together eggs, corn syrup, brown sugar, melted butter, vanilla, salt, and cinnamon. Add the coffee or water if using.
  6. Pour the filling into the crust and arrange the remaining pecans on top.
Baking
  1. Bake for 50 to 60 minutes. The center should still have a gentle jiggle, not a wet slosh.
  2. Cool at least 3 hours before slicing; overnight is even better.

Notes

If pie crust edges brown too fast, loosely tent with foil around the 30 minute mark. Toasting the pecans enhances flavor; check doneness by assessing wobble. For serving, add whipped cream or vanilla ice cream with a pinch of flaky salt for balance.
