Preparation
  1. Preheat your oven to 180°C (350°F) and grease a baking dish or line it with baking paper.
  2. Grate the zucchinis and squeeze them to remove excess water.
  3. In a large bowl, mix the grated zucchini, onion, cheddar cheese, garlic, herbs if using, salt, and pepper.
  4. In a separate bowl, whisk the eggs, olive oil, flour, and baking powder until mostly smooth.
