Preparation
- Preheat your oven to 180°C (350°F) and grease a baking dish or line it with baking paper.
- Grate the zucchinis and squeeze them to remove excess water.
- In a large bowl, mix the grated zucchini, onion, cheddar cheese, garlic, herbs if using, salt, and pepper.
- In a separate bowl, whisk the eggs, olive oil, flour, and baking powder until mostly smooth.
- Pour the egg mixture into the zucchini bowl and mix until well combined.
- Spread the mixture evenly in the prepared baking dish and smooth the top.
Baking
- Bake for about 30 to 40 minutes, or until golden and set in the middle.
